Yeah, I agree that the humans were not well developed characters. The zombies were the main character, so while I cheered for the salvation of humanity, I wasn’t very invested in the individuals.
I still love Dawn of the Dead (2004) better than this movie but this comes in 2nd to me.

You two really need to check out dog soldiers. I don't want to say much but it's a really brutal movie but it's gained somewhat of a cult classic status Although it was considered one of the best horror movies of 2002. It's something you got to see and come to a consensus all on your own but I think Ash will love it. We might get some no neck Hannah but I think she would actually enjoy it too.
